Cauliflower Ziti

As a work-from-home mother of three, I like to switch things up with my weekly keto dinner menu. This keeps things interesting for me! My only requirement for new recipes is that the flavor be on point! This is one of the things that I love about the keto diet. I can eat flavorful foods and still lose weight.

Cauliflower has become my bestie in my keto journey. I currently use it to replace rice, mac and cheese, and even in pizza crusts. Due to our history together and the trust we have built, I was more than willing to give Cauliflower another try as a ziti replacement.

Let me tell you! It did not disappoint. Because of the seasoning and spices I use, every bite is heaven. The Cauliflower submits to the flavor of the meat sauce perfectly. The cheese melted within and on top of this dish makes an already perfect dish ten times better. As an added bonus, the leftovers taste even better than the fresh batch. Ingredients

Cauliflower| 1

Ground Beef | 1 lb

Diced Tomatoes with Green Chilies| 1 can

Onion| 1

Bell Peppers | 1 cup

Garlic Cloves | 4

Pink Salt | 1 tsp

All-purpose Seasoning |1 tsp

Tumeric | ½ tsp

Cayenne Pepper | 1/8 tsp or a pinch

Paprika | ½ tsp

Avocado Oil/ Olive Oil | 2 tbsp

Shredded Mozzarella | 2 cups

Parmesan Cheese | 1 cup

Ricotta Cheese | 2 cups

Directions

  1. Preheat oven to 375 degrees F
  2. Fill a large pot with water and add ½ tsp sea salt to the pot. When the pot comes to a boil, add the chopped cauliflower pieces. Cook for 4-5 minutes or until a fork can easily go through each piece. Drain the water from the pot.
  3. Prepare your pan for cooking the ground beef by turning on your stove to medium to high heat. Heat the oil and then add the chopped onions and peppers. Cook until the onions are translucent.
  4. Add ground beef, ½ tsp salt, all-purpose seasoning, turmeric, cayenne pepper, and paprika to the pan. Cook until the beef is brown.
  5. Drain the can of tomatoes with green chilies and add the remaining contents of the can to the ground beef in the skillet. Let the meat mixture simmer on low heat for about 15 minutes.
  6. Add the meat mixture to the pot of drained cauliflower.
  7. In a bowl, combine the ricotta cheese and parmesan. Stir together to form a paste.
  8. In a baking dish, form layers of the cauliflower mixture first, ricotta cheese mixture second, and sprinkle mozzarella last until the dish is full. Cover the top layer with mozzarella cheese.
  9. Bake for 20 minutes or until the cheese on top browns a bit. Enjoy!
